If you want to increase your veggies and/or ditch the bread, wrapping those sandwich inners inside a big ‘ol collard green is the answer. Collard greens can be found in your produce section at your local health food store.

You can easily simply take all the ingredients you’d put into your regular sandwiches (meat, cheese, mayo) and roll it up into the collard leaf.

Ingredients
  • 1 can chickpeas (also called garbanzo beans)
  • 2 Tbsp chopped red onion
  • 2 Tbsp chopped carrots
  • 2 Tbsp cucumbers
  • 2 Tbsp chopped parlsey and dill
  • 2 Tbsp olive oil
  • 2 Tbsp avocado oil mayonnaise OR smashed avocado
  • Unrefined salt and pepper to taste
  • 1 Tbsp garlic powder

Instructions
  1. To make a wrap – cut off the end stem of the collard leaf while additionally, cutting a ‘v’ shape to cut any remaining tough stem off the leaf.
  2. Placing the V-side furthest from you, smear a line of hummus or pesto and top with tomato, cucumber and avocado. Sprinkle with salt.

  3. Fold both the right and left edges in toward the center and roll.

  4. Ticking in the sides as you go.
